Ingredients You'll Need

There are only 3 "ingredients", but a ton of options for this recipe!

Plain Greek yogurt - Greek yogurt has a thicker, creamier texture and tangier flavor than regular. Be sure to use the full-fat kind for best results. I love using it for this bark for the extra health benefits along with its rich flavor and texture.

Fresh fruit - This is where things can get fun! You need about one cup of diced fruit, but the variety is totally up to you! Make an all-berry version, use fruit from the colors of the rainbow, or pick and choose your favorite fruits or use what's in season.

Some ideas for fruit toppings (in rainbow order) are:

Red - strawberries, raspberries, pomegranate seeds, cherries

Orange - mandarin orange segments, mango

Yellow - peaches, pineapple

Green - kiwi, green grapes

Blue & Purple - blueberries, blackberries, red grapes

Choose fruit that isn't too watery or crunchy. These won't freeze well and will give the bark an unappetizing texture. I'm sure there's more you could add to this list!

Granola - I typically buy the standard oats & honey granola for my family, but use any flavor or variety you prefer. Store-bought is fine, but if you make your own that's great too! Smaller chunks work best.

How to Make Greek Yogurt Bark

This recipe is SO easy to make. Here's how to do it:

Step 1: Line a small baking sheet (with sides) with parchment or wax paper. Spread yogurt in an even rectangle that's about 10 inches wide by 14 inches long.

Top evenly with fruit and granola. When prepping the fruit, dice everything in a similar size.

Place the baking sheet in the freezer for 3-4 hours until completely frozen solid. Timing will depend on your freezer.

After it's frozen you can cut the bark into pieces. A butter knife will work fine for this. Cut the bark into as small or big of pieces as you prefer. They are the perfect frozen yogurt bar!

Serving Suggestions

This yogurt bark is meant to enjoy straight out of the freezer. It will soften fairly fast, so you'll go from bark to a parfait pretty quickly. A couple minutes will help it soften just enough to make it easy to bite into, but don't leave it out too much longer than that.

Variations

Yogurt variations

  • Use flavored Greek yogurt (i.e. strawberry or blueberry) and play with the amount of honey or maple syrup you add (if any) to achieve the right level of sweetness.
  • Swirl ¼ cup of jam into the yogurt after it's spread onto the sheet pan.
  • Mix ¼ cup peanut butter or almond butter to the yogurt for extra flavor and protein. You could also soften the peanut or almond butter in the microwave for 30 seconds and swirl it into the yogurt after it's been spread onto the baking sheet.

Topping variations

  • Use any combo of the fruit listed above
  • Add chocolate chips, coconut flakes, chopped nuts or sunflower seeds
  • Use a homemade granola or a different flavor of store-bought granola

How long does it take Greek yogurt bark to freeze?

The bark will take 3-4 hours to freeze solid. It must be completely frozen before you cut it!

How to store Greek yogurt bark

After breaking into pieces, place the bark in a freezer-safe airtight container or bag and keep in the freezer. The bark will keep for about 3 months.

Why is my Greek yogurt bark icy?

An insufficient freezer temperature or too watery of yogurt can cause ice buildup on the bark. To avoid, use full-fat Greek yogurt which will have less water content and reduce ice buildup.

  • 2 cups full-fat plain greek yogurt
  • ¼ cup honey or real maple syrup
  • ½ tsp. vanilla extract
  • 1 cup diced fresh fruit ideas below
  • ¼ cup granola small chunks

Method
 

  1. Line a baking sheet with parchment or wax paper.
  2. In a small bowl mix together yogurt, honey or syrup and vanilla.
    2 cups full-fat plain greek yogurt, ¼ cup honey or real maple syrup, ½ tsp. vanilla extract
  3. Spread yogurt in an even layer into a rectangle about 10 inches by 14 inches.
  4. Top evenly with diced fruit and granola.

  5. Place in the freezer for 3-4 hours until frozen solid. Cut bark into pieces and serve frozen.
  6. Store leftovers in an airtight container in the freezer.

Notes

- Use any combination of fruit you have on hand or prefer. For this batch I used strawberries, mango, kiwi, blueberries and red grapes. Ideas include:
