Frozen Greek Yogurt Bark

This Greek yogurt bark made with fresh fruit and granola is an easy frozen snack that can double as a breakfast side or a refreshing dessert. Both kids and adults love this recipe and it's completely customizable!

Ingredients
  

  • 2 cups full-fat plain greek yogurt
  • ¼ cup honey or real maple syrup
  • ½ tsp. vanilla extract
  • 1 cup diced fresh fruit ideas below
  • ¼ cup granola small chunks

Method
 

  1. Line a baking sheet with parchment or wax paper.
  2. In a small bowl mix together yogurt, honey or syrup and vanilla.
    2 cups full-fat plain greek yogurt, ¼ cup honey or real maple syrup, ½ tsp. vanilla extract
  3. Spread yogurt in an even layer into a rectangle about 10 inches by 14 inches.
  4. Top evenly with diced fruit and granola.
    1 cup diced fresh fruit, ¼ cup granola
  5. Place in the freezer for 3-4 hours until frozen solid. Cut bark into pieces and serve frozen.
  6. Store leftovers in an airtight container in the freezer.

Notes

- Use any combination of fruit you have on hand or prefer. For this batch I used strawberries, mango, kiwi, blueberries and red grapes. Ideas include:
  • strawberries, raspberries, pomegranate seeds, cherries
  • mandarin orange segments, mango, peaches, pineapple
  • kiwi, green grapes
  • blueberries, blackberries, red grapes
 
-Dice fruit so it's all a similar size and equals 1 cup total.
