Pizza is basically its own food group in our house, so turning it into breakfast just makes sense. This breakfast pizza with sausage gravy has all the savory flavors we love, just dressed up for the morning with fluffy eggs and a buttery crescent roll crust.

It's always a hit, whether it's a slow weekend breakfast or a Sunday brunch.

  • Crescent rolls - The store-bought kind. I love using crescent dough for this crescent roll breakfast pizza because it bakes up flaky and buttery vs. a regular pizza crust.
  • Breakfast sausage - Use your favorite bulk sausage for the gravy. Classic seasoned, maple or even a spicy version would work great.
  • Eggs - 6 eggs are seasoned and mixed with some milk to create the fluffiest scrambled eggs to top the pizza.
  • Cheese - I use Colby jack but cheddar cheese, pepper jack or a mix would also be delish.
  • Ham/bacon - Diced ham or crumbled bacon add more flavor to the breakfast pizza. Or you could use both for a meat lovers version! Use this sheet-pan bacon recipe for the bacon.

How to Make the Best Sausage Gravy Breakfast Pizza

Step 1: The Crust - Unroll 2 crescent rolls onto an 11x15 baking sheet lined with parchment paper. Press seams together well to prevent gravy leaks. Bake the crust at 375 degrees. for 8-9 minutes. Pre-baking the crust helps prevent a soggy bottom.

Step 2: The Eggs - Whisk together eggs, milk, salt, and black pepper. Melt butter in a skillet over medium heat, add whisked eggs, and cook slowly, stirring with a rubber spatula until just barely set. Remove from heat and place the eggs on a plate.

Quick Tip: Don't overcook the eggs and they will turn rubbery during the final pizza bake!

Step 3: The Sausage Gravy - Wipe out the skillet and cook breakfast sausage until no longer pink, breaking it apart as it cooks.

Sprinkle flour over the sausage and stir to coat. Slowly add milk and bring to a gentle simmer, stirring constantly. Within a couple of minutes, it will thicken into a creamy gravy. Season with salt and pepper.

Step 4: Assemble - Pour sausage gravy over the crust and spread evenly, leaving ¼ of crust on the edge.

Top evenly with scrambled egg mixture, cheese and bacon or ham.

Step 5: Bake - Bake the breakfast pizza with sausage gravy for 7-8 minutes, until the cheese is melted and everything is heated through.

Garnish with sliced green onions, if desired. Cut into squares and enjoy!

Make-Ahead Option: You can make the crust, sausage gravy and scrambled eggs up to 24 hours ahead of time. Store them separately in the fridge, then assemble and bake the pizza the next morning. Cooking time may increase if ingredients are cold.

What to Serve with Breakfast Pizza with Sausage Gravy

This breakfast pizza with sausage gravy is hearty enough on it's own but can also be served with fresh fruit, breakfast potatoes or sweet options like French toast or these pistachio muffins as part of a larger brunch spread.

Cut squares as big or small as you'd like. Smaller sizes (4x5) are nice for a large group or as part of a brunch table, while larger sized (3x4) is a hearty option for a main breakfast dish.

Hostess Tip: Keep the baked breakfast pizza warm in a 200°F oven for up to 30 minutes before serving.

Storage Tips

Store leftovers in an airtight container in the refigeratorfor up to 4 days.

Reheat individual slices in the microwave in 30-second bursts.

For larger amounts and less soggy results, reheat on a baking sheet at 350°F for about 15 minutes. A toaster oven would also work great.

Breakfast pizza can also be made ahead and stored in the freezer.

Ingredients
  

Crust
  • 2 8 oz. crescent roll dough
Sausage Gravy
  • ½ pound pork breakfast sausage ground
  • 3 tbsp. flour
  • 1 ½ cups milk
  • ½ tsp. salt
  • ½ tsp. black pepper
Scrambled Eggs
  • 6 eggs
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ¼ cup milk
  • 2 tbsp. butter
Pizza Toppings
  • 1 cup Colby jack cheese shredded
  • 1 cup chopped bacon or ham
  • green onions sliced, optional

Method
 

Crust
  1. Preheat oven to 375 degrees. Line bottom of an 11x15 baking sheet with parchment paper.
  2. Unroll crescent roll dough and press into bottom of baking sheet. Poke holes in the bottom of the crust with a fork so it doesn't puff up.

  3. Par bake the crust for 8-9 minutes until lightly golden brown.
Scrambled Eggs
  1. In a bowl whisk eggs, salt, pepper and milk until well combined.
    ½ tsp. salt, 6 eggs, ¼ tsp. black pepper, ¼ cup milk
  2. Melt butter in a skillet over medium heat. Add eggs and use a rubber spatula to fold & stir the eggs as they cook. Remove from heat when just a little liquid remains. Do not overcook as the eggs will turn rubbery! Place eggs on a plate and wipe out the skillet.
    2 tbsp. butter
Sausage Gravy
  1. In the skillet add breakfast sausage and break apart into small pieces. Cook until no longer pink.
    ½ pound pork breakfast sausage
  2. Sprinkle flour over sausage and mix until coated. Slowly add milk and stir over medium heat until thickened. Season with salt and pepper.
    3 tbsp. flour, 1 ½ cups milk, ½ tsp. black pepper, ½ tsp. salt
Pizza Assembly
  1. Spread sausage gravy over crust, leaving about half an inch of crust on the edge.
  2. Top evenly with scrambled eggs, cheese and bacon/ham. Bake pizza for 7-8 minutes until cheese is melted.
    1 cup Colby jack cheese, 1 cup chopped bacon or ham
  3. Garnish with sliced green onions, if desired. Cut into squares.
