This sausage gravy breakfast pizza starts with a buttery, flaky crescent roll crust that's topped with homemade sausage gravy, fluffy scrambled eggs, bacon, and melty cheese. It’s hearty, comforting, and perfect for breakfast or brunch.
Preheat oven to 375 degrees. Line bottom of an 11x15 baking sheet with parchment paper.
Unroll crescent roll dough and press into bottom of baking sheet. Poke holes in the bottom of the crust with a fork so it doesn't puff up.
2 8 oz. crescent roll dough
Par bake the crust for 8-9 minutes until lightly golden brown.
Scrambled Eggs
In a bowl whisk eggs, salt, pepper and milk until well combined.
1/2 tsp. salt, 6 eggs, 1/4 tsp. black pepper, 1/4 cup milk
Melt butter in a skillet over medium heat. Add eggs and use a rubber spatula to fold & stir the eggs as they cook. Remove from heat when just a little liquid remains. Do not overcook as the eggs will turn rubbery! Place eggs on a plate and wipe out the skillet.

Sausage Gravy
In the skillet add breakfast sausage and break apart into small pieces. Cook until no longer pink.
1/2 pound pork breakfast sausage
Sprinkle flour over sausage and mix until coated. Slowly add milk and stir over medium heat until thickened. Season with salt and pepper.

Pizza Assembly
Spread sausage gravy over crust, leaving about half an inch of crust on the edge.
Top evenly with scrambled eggs, cheese and bacon/ham. Bake pizza for 7-8 minutes until cheese is melted.
1 cup Colby jack cheese, 1 cup chopped bacon or ham
Garnish with sliced green onions, if desired. Cut into squares.
