Buffalo Chicken Pinwheels

These buffalo chicken pinwheels are filled with shredded chicken, cream cheese, ranch, buffalo sauce, cheddar and blue cheese for all the flavors of classic buffalo wings rolled into an easy appetizer. The creamy buffalo chicken filling is spread onto flour tortillas, rolled, chilled and sliced into bite-sized pinwheels.

  • Cream cheese – The base for the creamy filling of these pinwheels. Fat-free or Neufchâtel can be used.
  • Buffalo sauce – Franks RedHot is the standard, but feel free to use your favorite buffalo wing sauce. It adds plenty of tangy heat without making the filling overly spicy.
  • Ranch dressing – Adds the familiar herby ranch flavor that pairs so well with buffalo chicken while helping make the cream cheese easier to spread.
  • Shredded chicken – Leftover or rotisserie chicken makes these pinwheels especially easy. Shred or chop it fairly finely so the tortillas roll and slice cleanly. If cooking chicken from raw, you’ll need about 1 pound.
  • Cheddar cheese – The sharpness of cheddar can stand up to the other bold flavors and helps tame the spice.
  • Blue cheese – Adds that unmistakable tangy blue cheese flavor you expect with buffalo wings. If you’re not a fan, just leave it out.
  • Green Onion – Adds a mild onion flavor and a fresh pop of color. Use both the white and green parts, thinly sliced.
  • Flour tortillas – “Burrito” sized ones that are around 10 inches in diameter. Room-temperature tortillas will be easier to roll without cracking.

How to Make Buffalo Chicken Pinwheels

Make the buffalo chicken filling: Add the softened cream cheese, ranch dressing and buffalo sauce to a large mixing bowl. Beat with a hand mixer until smooth and well combined.

Add the shredded chicken, cheddar cheese, blue cheese and green onions. Fold everything together with a spatula until evenly combined.

Fill the tortillas: Lay the flour tortillas flat on a clean work surface. Divide the buffalo chicken mixture evenly between them and spread into an even layer, leaving about a ½-inch border around the edges.

Roll: Starting at one edge, tightly roll each tortilla into a log. Keep the roll snug without pressing so hard that the filling squeezes out.

Chill: Wrap each tortilla roll tightly in plastic wrap and refrigerate for at least 1 hour. Chilling firms up the filling and makes the pinwheels much easier to slice cleanly.

Slice: Unwrap the chilled tortilla rolls and trim about ½–1 inch from each end where there isn’t much filling. Using a sharp knife, cut each roll into approximately 1-inch slices.

Tips for the Best Pinwheels

  • Soften the cream cheese. Room-temperature cream cheese blends smoothly with the ranch and buffalo sauce without leaving lumps.
  • Finely chop the filling ingredients. Smaller pieces of chicken and green onion make the tortillas easier to roll and give you cleaner slices.
  • Don’t spread all the way to the edge. Leaving about ½ inch around the tortilla gives the filling somewhere to go as you roll.
  • Roll them tightly. A snug roll creates the best spiral and helps the pinwheels hold together.
  • Don’t skip the chill time. Refrigerating for at least an hour firms up the cream cheese filling and makes slicing much easier.
  • Use a sharp knife. A serrated knife works best. Wipe the blade clean between cuts if filling starts sticking to it.

Serving Tips

Serve buffalo chicken pinwheels cold or chilled on a platter with ranch and blue cheese dressing for dipping. Add celery and carrot sticks for a fun appetizer inspired by a plate of classic buffalo wings.

These pinwheels are especially good for game day, Super Bowl parties, potlucks and holiday appetizer spreads, but they also work well for an easy make-ahead lunch.

Storage & Make Ahead Tips

Storage: Store leftover buffalo chicken pinwheels in an airtight container in the refrigerator for up to 3–4 days. For the best texture, enjoy them within 2 days since the tortillas will gradually soften as they absorb moisture from the filling.

Make ahead: Assemble and roll the tortillas up to 24 hours ahead of time. Wrap each roll tightly in plastic wrap and refrigerate it whole, then slice shortly before serving.

Freezing: I would not recommend freezing these. Cream cheese-based fillings can change texture after thawing, and the tortillas are likely to become soggy.

Ingredients

  • 8 oz. cream cheese softened
  • ¼ cup buffalo wing sauce like Frank's RedHot

Instructions
