Breakfast Smash Tacos

Breakfast smash tacos are made up of a crispy, thin sausage patty cooked on a tortilla and topped with cheese, eggs and all your favorite taco toppings. They are a fun twist on a breakfast favorite and they come together so quick – in 15 minutes or less!

In the last few years, the concept of smash tacos has become a viral trend. Meat is “smashed” onto a tortilla and cooked until crispy. One of the best parts of this concept is how quick the meat cooks because it’s so thin.

I had a lightbulb moment when I thought of this concept for breakfast tacos. The result was delish! Savory dishes like this are a nice change to the sweeter breakfast recipes like English Muffin French Toast, Breakfast Corn Dogs or these Pistachio Muffins.

What you’ll need for this recipe:

  • Breakfast sausage – pre-seasoned, bulk pork breakfast sausage
  • Flour tortillas – easier to use than corn tortillas for this concept as they will hold together when pressing the meat onto them and folding them to eat. Look for the smaller 5-6 inch “fajita” size tortillas.
  • American cheese – I’m all for fancy cheese, but good ol’ American cheese definitely has its time and place. It melts perfectly on these tacos.
  • Eggs – It’s all your preference here. Make them scrambled, over-easy or sunny-side-up

How to Make Breakfast Smash Tacos

Separate breakfast sausage into 6 equal pieces. “Smash” each piece onto a tortilla, getting as close to the edge as you can.

Place tortillas sausage side down in a pan, griddle or flat top grill that’s set to high heat. Cook for 3-4 minutes until sausage is cooked through and has a crispy edge.

Flip over and place a slice of American cheese on top of each sausage patty. Cook another minute. Place on a sheet pan.

Cook your eggs to your liking in the same pan, griddle or grill turned down to medium heat. Top each taco with an egg and your favorite taco toppings.

This is a great recipe to make on your outdoor flat top grill like a Blackstone, but can easily be made indoors on a griddle or large skillet! Great for any time of year!

Serving Tips

The possibilities are endless when it comes to what you top these tacos with. Some ideas include:

  • Salsa, pico de Gallo, sour cream, guacamole, diced avocado, cilantro or hot sauce

If you’re feeling extra wild with your breakfast taco game add some breakfast potatoes, hash browns, sautéed peppers and onions or top with hollandaise sauce. Yum!

Serve these breakfast tacos with some fresh fruit, yogurt or potatoes o’brien for a satisfying breakfast!

Recipe Variations

  • Use an alternative meat like chicken or turkey breakfast sausage, but note due to the lower fat content, the patties will shrink more when cooking
  • Use chorizo sausage for a spicier flavor
  • Switch up the cheese for cheddar, Cotija or pepper jack

Ingredients

  • 1 pound pork breakfast sausage
  • 6 – 6 inch flour tortillas fajita size
  • 6 slices American cheese
  • 2 tbsp. butter
  • 6 eggs cooked your style
  • salt and pepper to taste

Instructions

  1. Split sausage into 6 equal balls. Spread each ball onto a tortilla, getting as close to the edge as possible (meat will be thin).
    1 pound pork breakfast sausage, 6 – 6 inch flour tortillas
  2. Turn on your skillet, griddle or flat top grill over high heat.
  3. Place tortillas meat side down on flat top and cook for 3-4 minutes. Flip tortilla over, add one slice of American cheese on top of each sausage patty and cook another minute. Remove and repeat with remaining tacos depending on the size of your grill/pan.
    6 slices American cheese
  4. Turn heat down to medium and melt butter in pan/griddle. Season eggs with salt and pepper and cook them to your liking. Add cooked eggs to the top of each taco.
    2 tbsp. butter, 6 eggs
  5. Finish with desired taco toppings.

Notes

Topping Ideas:
  • salsa, pico de Gallo, avocado slices, guacamole, hot sauce, cilantro or and/or sour cream
Eggs:
  • Cook your eggs over-easy, fried, sunny-side-up or scrambled.
