Method
- Split sausage into 6 equal balls. Spread each ball onto a tortilla, getting as close to the edge as possible (meat will be thin).1 pound pork breakfast sausage, 6 - 6 inch flour tortillas
- Turn on your skillet, griddle or flat top grill over high heat.
- Place tortillas meat side down on flat top and cook for 3-4 minutes. Flip tortilla over, add one slice of American cheese on top of each sausage patty and cook another minute. Remove and repeat with remaining tacos depending on the size of your grill/pan.6 slices American cheese
- Turn heat down to medium and melt butter in pan/griddle. Season eggs with salt and pepper and cook them to your liking. Add cooked eggs to the top of each taco.2 tbsp. butter, 6 eggs
- Finish with desired taco toppings.
Notes
Topping Ideas:
- salsa, pico de Gallo, avocado slices, guacamole, hot sauce, cilantro or and/or sour cream
- Cook your eggs over-easy, fried, sunny-side-up or scrambled.
