Level up your Caesar salad game with this Grilled Caesar Salad. Both the romaine & croutons are grilled and served with an easy homemade Caesar dressing. This is the perfect summer salad!

Ingredients
  

  • 6 slices Italian bread about 1 inch thick
  • 2 tbsp. olive oil
  • 2 cloves garlic minced
  • 3 hearts romaine lettuce
Caesar Dressing
  • 1 cup mayo
  • 2 cloves garlic minced
  • 2 tsp. Dijon mustard
  • 1 tsp. red wine vinegar
  • 1 tsp. Worcestershire sauce
  • juice of half a lemon
  • ¼ cup parmesan cheese grated
  • 1.5-2 tbsp. olive oil
  • pinch of salt & pepper
Topping Ideas:
  • shaved parmesan cheese
  • grape tomatoes
  • grilled chicken

  • Grill Tongs

Method
 

  1. In a small bowl mix together olive oil & garlic. Brush each side of the Italian bread with the oil.
  2. Turn grill onto medium heat. Grill bread slices about a minute on each side until nice grill marks form. Allow bread to cool and cut into cubes.
  3. Cut each romaine heart in half lengthwise. Cut off about an inch of the core end. Brush each side with olive oil and a pinch of kosher salt.
  4. Grill romaine hearts over medium heat about minutes on each side until the outer leaves begin to wilt and there are some nice grill marks. Remove from grill onto a sheet pan.
Caesar Dressing
  1. Combine all dressing ingredients in a bowl and whisk until smooth. Start with 1 ½ tbsp. of olive oil and add up to ½ tbsp. more to get desired texture.
Salad Assembly
  1. Place romaine heart on a plate and top with grilled croutons, parmesan cheese, dressing and desired toppings.

Notes

Turn this salad into a main dish by adding grilled chicken, steak or shrimp!
