Greek Pita Pizzas

These Greek Pita Pizzas are a fun twist on veggie pizza! Pita bread is topped with hummus, an easy Greek salad and feta cheese. Serve as a party appetizer or light lunch that is both healthy and packed with flavor!

Ingredients
  

Greek Salad
  • 1 cup seedless cucumber chopped
  • 1 pint grape tomatoes halved
  • ½ cup red onion thinly sliced
  • 1 cup Kalamata olives halved
  • 2 cups romaine lettuce chopped
Greek Vinaigrette
  • 2 tbsp. olive oil
  • 1 tbsp. red wine vinegar
  • 1 tsp. Dijon mustard
  • 1 clove garlic minced
  • ½ tsp. dried oregano
  • pinch of salt
  • pinch of black pepper
Other Pizza Ingredients
  • 6 pita bread rounds
  • 12 oz. container plain hummus
  • ½ cup feta cheese

Method
 

  1. Preheat oven to 350 degrees. Place pita breads on baking sheet and heat in oven 2-3 minutes.
  2. Place cucumber, tomato, onion, olives and lettuce in a mixing bowl.
  3. In a small bowl or mason jar combine vinaigrette ingredients until well combined. Pour over veggies and toss to coat.
  4. Place 2-3 tablespoons of hummus on a pita bread and spread evenly within ½ inch of edge. Top with about 1 cup of veggie mixture and sprinkle with feta cheese.
  5. Cut pita into 4 triangles and serve immediately.

Notes

  • Don't assemble salad until right before serving to avoid sogginess. To save time, cut the veggies and make the vinaigrette in advance and chill until serving time. Then, simply toss everything together.
  • Use a garlic or red pepper hummus for added flavor!
