Method
- Preheat oven to 350 degrees. Place pita breads on baking sheet and heat in oven 2-3 minutes.
- Place cucumber, tomato, onion, olives and lettuce in a mixing bowl.
- In a small bowl or mason jar combine vinaigrette ingredients until well combined. Pour over veggies and toss to coat.
- Place 2-3 tablespoons of hummus on a pita bread and spread evenly within ½ inch of edge. Top with about 1 cup of veggie mixture and sprinkle with feta cheese.
- Cut pita into 4 triangles and serve immediately.
Notes
- Don't assemble salad until right before serving to avoid sogginess. To save time, cut the veggies and make the vinaigrette in advance and chill until serving time. Then, simply toss everything together.
- Use a garlic or red pepper hummus for added flavor!
