Frozen Chocolate Covered Strawberries

These frozen chocolate covered strawberries are a homemade take on the popular store-bought, "TruFru" treats. This DIY recipe uses fresh strawberries that are dipped not once, but twice in chocolate and frozen. Perfect sweet snack or Valentine's Day treat!

Ingredients
  

  • 1 pint fresh strawberries
  • 1 ½ cups dark chocolate chips
  • 1 ½ cups white chocolate chips
  • 2 tbsp. refined coconut oil divided

Method
 

  1. Thoroughly wash berries and place on a clean kitchen towel or paper towels to dry. Remove the stems and cut strawberries in half the long way.
  2. Line a cookie sheet with parchment or wax paper.
  3. In a microwave safe bowl, add white chocolate and coconut oil. Melt in 30 second intervals, stirring in between, until fully melted. Use a fork to dip each strawberry piece in the chocolate until completely coated. Let excess drip off and place on cookie sheet.
  4. Once all the pieces are dipped, place cookie sheet in the freezer for 15 minutes.
  5. Repeat the same process with the dark chocolate by adding the chips and coconut oil to a bowl and microwaving until fully melted.
  6. Remove the strawberries from the freezer and dip each piece again to fully coat in the dark chocolate. Place back on the cookie sheet and freeze again for another 15 minutes.
  7. Transfer the strawberry bites to an airtight container or bag and keep them in the freezer.

Notes

  • The strawberries are ready to eat after the chocolate fully sets. It will take about an hour for the strawberry to fully freeze, but these bites can be enjoyed anytime after the final 15 minutes. 
  • These strawberry bites are meant to be eaten frozen. Thawing them before eating will result in a mushy strawberry center. Eat them right out of the freezer or let them sit out for a few minutes to thaw just slightly before enjoying.
