Thoroughly wash berries and place on a clean kitchen towel or paper towels to dry. Remove the stems and cut strawberries in half the long way.
Line a cookie sheet with parchment or wax paper.
In a microwave safe bowl, add white chocolate and coconut oil. Melt in 30 second intervals, stirring in between, until fully melted. Use a fork to dip each strawberry piece in the chocolate until completely coated. Let excess drip off and place on cookie sheet.
Once all the pieces are dipped, place cookie sheet in the freezer for 15 minutes.
Repeat the same process with the dark chocolate by adding the chips and coconut oil to a bowl and microwaving until fully melted.
Remove the strawberries from the freezer and dip each piece again to fully coat in the dark chocolate. Place back on the cookie sheet and freeze again for another 15 minutes.
Transfer the strawberry bites to an airtight container or bag and keep them in the freezer.
