Tater Tot Pizza Casserole

This meat lovers pizza casserole is influenced by my Minnesota roots and uses tater tots instead of pasta. This easy, cheesy hot dish recipe uses no canned soup and is totally customizable for a delicious weeknight meal!

Ingredients
  

  • 1 tbsp. olive oil
  • 1 # ground beef
  • ½ # Italian pork sausage ground
  • 1 small yellow onion chopped
  • 1 green bell pepper chopped
  • 23 oz. can marinara or spaghetti sauce
  • 1 tsp. salt
  • 2 tsp. Italian seasoning
  • ½ tsp. garlic powder
  • 2.25 oz. can sliced black olives
  • 4 oz. can sliced mushrooms
  • 32 oz. bag frozen tater tots
  • 2 cups mozzarella cheese shredded
  • sliced pepperoni about 30 slices

Method
 

  1. Preheat oven to 400 degrees.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and sausage. Season with salt, Italian seasoning and garlic powder. Break meat apart into small pieces and cook until no longer pink. Drain any excess grease.

  3. Add chopped onion and peppers. Sauté 2-3 minutes until they start to soften. Add marinara sauce, olives and mushrooms. Mix well and remove from heat.

  4. Place meat mixture in the bottom of a 9x13 or 3 quart baking dish. Top with tater tots.

  5. Bake casserole for 35-40 minutes until tater tots are crispy. Remove from oven and evenly spread cheese over the tater tots and top with pepperoni slices.
    2 cups mozzarella cheese, sliced pepperoni
  6. Bake for an additional 5 minutes until cheese is melted.
