Lime Jello Salad with Pears (Seafoam Salad)

This Lime Jello Salad with Pears, also known as Seafoam Salad, is a creamy, nostalgic side dish made with just 4 ingredients. Sweet pears, lime jello, cream cheese and whipped topping come together for an easy addition to holidays, potlucks and family gatherings.

Ingredients

  • 2 15 oz. cans pear halves in 100% juice
  • 3 oz. box lime jello
  • 8 oz. cream cheese softened
  • 8 oz. frozen whipped topping (Cool Whip) thawed

Instructions

  1. Drain pears and reserve 1 cup of juice. Dice pears into 1/2 inch pieces. Set aside.

  2. In a mixing bowl beat cream cheese with a hand mixer until smooth.
    8 oz. cream cheese
  3. Pour the reserved pear juice into a small saucepan and bring to a boil over medium heat. Remove from the heat and whisk in the lime jello until completely dissolved.
    3 oz. box lime jello
  4. Add about 1/2 of jello mixture to the cream cheese and beat with hand mixer until smooth. Slowly add the rest of the jello liquid while continuing to beat with hand mixer until fully combined. A few small cream cheese lumps are okay.
  5. Place bowl in the refrigerator and allow the mixture to slightly set, about 45-50 minutes. The mixture should be the consistency of pudding.
  6. Gently fold in the whipped topping and diced pears until evenly combined. Cover and refrigerate for at least 1 hour before serving.
    8 oz. frozen whipped topping (Cool Whip)

.- Add 2 cups of mini marshmallows and/or 1/2 cup chopped walnuts for some fun texture.
