4-Ingredient Cheesy Hash Brown Casserole (Without Soup)

This cheesy hash brown casserole only requires 4 ingredients and is made without canned soup. It's an easy comfort food side dish that's great to serve for brunch, holidays, potlucks or weeknight dinners.

Ingredients

  • 30 oz. bag shredded hash browns thawed
  • 2 cups sharp cheddar cheese shredded
  • 1 ½ tsp. salt
  • 2 cups heavy whipping cream
  • ½ tsp. paprika optional

Optional Topping

  • 2 cups corn flake cereal slightly crushed
  • 4 tbsp. butter melted

Instructions

  1. Preheat oven to 350 degrees. Grease the bottom and sides of a 9X13 baking dish with non-stick cooking spray.
  2. Pour 1/2 bag of hashbrowns in the bottom of the baking dish. Sprinkle 1 cup of cheese & half of salt evenly on top.
  3. Pour the rest of the hashbrowns on top and sprinkle with remaining 1 cup of cheese & the rest of the salt.
  4. Pour heavy whipping cream over the whole pan. Do not stir! Sprinkle paprika over the top, if desired.
    2 cups heavy whipping cream, 1/2 tsp. paprika
  5. Bake uncovered 45-50 minutes until hot and bubbly.

Optional Cornflake Topping

  1. If using topping, slightly crush corn flake cereal and combine with melted butter. Sprinkle evenly over potatoes before baking .
    2 cups corn flake cereal, 4 tbsp. butter
