Poppyseed Chicken Salad with Grapes and Almonds

- 4 cups cooked chicken diced into 1 inch cubes
- ½ cup red onion chopped
- ½ cup dried cranberries
- ½ cup celery chopped
- ½ cup sliced almonds
- 1 cup red grapes halved
- butter lettuce or dinner rolls for serving
Poppyseed Dressing
- 1 cup mayo
- ½ cup white sugar
- 2 tbsp. white vinegar
- ½ tsp. Dijon mustard
- ¼ tsp. salt
- ⅛ tsp. black pepper
- 2 tsp. poppy seeds
In a large bowl. combine all the salad ingredients and mix well.
In a small mixing bowl, whisk together poppy seed dressing ingredients. Pour over chicken salad and stir to coat well.
Cover and refrigerate salad for at least an hour to develop flavors. Serve on bread, in a wrap or on a lettuce leaf.
