Roasted Broccoli Cheddar Soup

Roast the broccoli

– Preheat oven to 400 degrees. – Chop broccoli florets into bite size pieces. Place on a large sheet pan and drizzle with 2 tbsp. olive oil. Season with salt, pepper & garlic. Toss well. Roast 25 minutes until tender.

Start the soup

– Heat butter & olive oil over medium-high heat. Add carrots & onion and sauté 5-7 minutes. – Stir in flour & dry mustard & add in chicken broth and bring to a simmer & cook about 10 minutes until carrots are tender.

Add the roasted broccoli & cheese

Add roasted broccoli and slowly stir in cheddar cheese. Stir well until cheese is completely melted..

Finish with heavy cream

Turn heat to low and pour in heavy cream. Heat through for another few minutes. Add salt & pepper to taste.
