Place broccoli, cauliflower and carrots on a large sheet pan. Drizzle with olive oil and season with salt, pepper & garlic powder. Toss well and spread into an even layer.

Roast at 425 degrees for 15-20 minutes until tender.

Melt butter over medium-high heat. Add onion and sauté 4-5 minutes until translucent. Add garlic. Stir in flour & dry mustard.

Add roasted vegetables and bring to a simmer for 2 minutes. Slowly stir in cheddar cheese. Stir until cheese is completely melted.

Turn heat to low and pour in half & half. Heat through for another few minutes, but do not boil. Season with extra salt and pepper, if needed.
